Idaho is the 39th most populous state in the union, so it's probably not surprising that it doesn't have a massive number of options when it comes to coffee roasters. Fortunately, it is home to a fairly prominent roaster - Doma, which is major enough that I actually spotted Doma coffee in the local Whole Foods here in Kansas City! It was, however, three months off roast, which may be within the shelf life window but is much older than I want my coffee to be, so I had it shipped in regardless.

Geographically, Doma had a pretty rounded selection of coffees to choose from when I went onto their website. I started with an Ethiopian, as it was their one East African option at the time and, as noted previously, those coffees have been treating me well lately. This was another pretty good example of the form - a classically light and delicate Ethiopian heirloom. I'm not sure I found the body "creamy" as the bag states, but I got what I typically expect out of an Ethiopian coffee, and the natural processing added some nice fruit and wine-like notes. This was a nice morning coffee and I rated it an 8, Very Good.
Since I started doing ratings, only four coffees had earned the top rating of 10 - and all had been from Paradise Roasters. One would definitely think that eventually a coffee in the state project would hit those heights, and it finally happened! Doma's Papua New Guinea offering was just a pleasure to drink from beginning to end. It opened with a mellow acidity, reminiscent of melon and tropical fruit; notes of butterscotch and toffee emerged, with hints of chocolate. I find that my favorite coffees often have a shifting flavor profile as they cool, and that happened here, with an apple cinnamon flavor emerging later in the cup. In addition to all this, the body was so creamy I virtually forgot that I was drinking it black! Coffee is of course a moving target, and someone else may or may not have exactly the same experience that I did, but from a personal standpoint I couldn't recommend this coffee enough. It took my top rating, 10, Superlative, and it certainly earned it.
The big news here is that we have a new undisputed leader atop the rankings! Doma's total score of 18 leapfrogs Verve, Color, and Amavida into first place, and although we still have quite a few states to go, they have certainly set the bar high! How long will it be before we see another 10? Can another roaster put out a 9 and a 10, or even two 10s? We'll see! Next up is Illinois, my sort-of home state. Gonna be interesting to move forward from here!
